Swamp Head Brewery's Beers Coming to Bottles

(Gainsville, FL) - Swamp Head Brewery is pretty new to the craft scene, but that hasn't stopped them from coming up with a bunch of recipes already.  The brewery strives to be a premier microbrewery serving Northwest Florida.  Currently you can find their beers on tap or special order a keg.  In the next couple months, many of their beers will be making their way into bottles.  Here's a rundown of the beer going to bottles.

Swamp Head Big Nose"Created wtih crystal clear spring water that originates in the Okeefenokee Swamp, Big Nose IPA is a mystical elixir for hop lovers.  Inhale the aroma and devour the flavor of Big Nose.

Big Nose features massive amounts of late flavor and aroma hops, augmented with dry hopping and our unique hop filtering process as we transfer the fermented ale to conditioning tanks for carbonation and aging.  A rich malt backbone combines with the intense hop flavors to deliver a balanced finish that will keep you coming back to say beer me!"  Big Nose IPA is hopped with Centennial and Amarillo hops and comes in at 7.3% abv and 50 IBUs.

Swamp Head Stump Knocker"A refreshing American Pale Ale with a pleasurable hop aroma and taste.  A chip off the old block of our Big NOse, Stump Knocker is a bit smaller, but he's got the same hop headed attitude.

Stump Knocker features late flavor and aroma hops, augmented wtih dry hopping and our unique hop filtering process as we transfer the fermented ale to conditioning tanks for carbonation and aging.  These techniques produce a hop-centered ale with a crisp, balanced finish that will recharge your palate!"  Stump knocker, like Big Nose IPA, is hopped with Centennial and Amarillo hops.  It comes in at 5.6% abv and 35 IBUs.

Swamp Head CottonmouthIndigenous to North Florida, it's not hard to find this creature around the swamp.  Its voluminous white head leaves wisps of lace on the glass and a subtle sweet finish that lingers.  Indulge yourself with a homegrown wheat bier brewed in the Belgian tradition.

Cottonmouth is brewed using traditional witbier ingredients, however, we ferment it using a Belgian wheat bier yeast that produces higher levels of esters.  The result is a unique Belgian style wheat bier with a hint of the fruity esters found in a German Hefeweizen."  Cottonmouth uses three malts and two organic hops along with freshly-ground coriander and Curacao.  It comes in at 5% abv and 10.5 IBUs.

Swamp Head Wild NightWild Night- "Light and refreshing, yet busting with flavor.  We add Florida Tupelo honey to a traditional cream ale, and just a touch of hops, to update this American classic.  This is what a light beer should be.

Tupelo honey is produced from the tupelo gum tree which grows profusely along the Chipola and Apalachicola rivers of northwest Florida.  Here in the river swamps, bees are placed on elevated platforms along the river's edge or on floating barges; the bees fan out through the surrounding Tupelo-blossom-laden swamps during April and May and return with their precious treasure.  This river valley is the only place in the world where Tupelo Honey is produced commercially.

Tupelo Honey is considered to be the finest quality honey in the world and is the only variety certified for varietal purity.  It costs a bit more, but we think you will find it produces a crisp light beer that rivals the finest lagers in the world."  Interestingly, this beer uses corn in addition to barley.  It is hopped with organic Hallertau hops from New Zealand.  5.9% abv and 17.9 IBUs.

Swamp Head Midnight OilMidnight Oil is an Oatmeal Coffee Stout. "Quiet and sensual like a moonlit night, this complex blend of toasted oats, roasted barley, chocolate wheat malt, and dark roast organic coffee, imparts an intense aroma and complex flavor profile.  Midnight Oil will wake up your senses.

We brew a traditional English oatmeal stout with a rich malt profile, then add locally roasted organic fair trade coffee while this ale is cold conditioned.  Cold extraction imparts an intense coffee aroma and flavor without the bitter oils using heat processing techniques."  This one comes in at 5% abv and 38 IBUs.
