Batch 004 - Goldie Hops

Brewed up my 4th batch today - Goldie Hops - recipe as below:

Partial mash with 6oz. 2 Row and 8oz. Munich at 150 degrees for 35 mins...sparged into 160 degree water for 15 mins and blended back together.

In the boil:
1 lb. Wheat DME
1 lb. Extra Light DME
1 lb. Light DME
3.3 lb. Light Malt Extract
1 lb. Light Candy Sugar

.5oz each Amarillo (9.3 AA) and Simcoe (12 AA) at 60mins.
.5oz each Amarillo and Simcoe at 20mins.
.5oz Amarillo at 15 mins.
BrewVint Yeast Fuel capsule at 15 mins.
.5oz Amarillo at 10 mins.
.25 tsp Irish Moss at 10 mins.
1oz Amarillo at 5 mins.
1lb light candy sugar went in at 5 mins as well

OG around 1.080 to 1.085

Fermeting with Wyeast 1332 Northwest Ale smack pack that was bulging nicely.  ;)

Going to rack to secondary and dry hop with 3 oz more Amarillo.  Have some medium toast oak chips as I've enjoyed oaked IPA's before...but I'm on the fence about using them in secondary....any thoughts / opinions??

If you use the oak be careful and taste it daily.  You can over oak a beer really quickly.

Yep, I've been reading this over and over again :)

I have 2.5oz of medium toast oak chips I got from Austin Homebrew. Still on the fence and I may just stick with the hops on this one.....

This is fermenting like crazy as I type and already smells great......looking forward to it!!  :ale:

I've pretty much had 100% recommendation to do this so I think I will save the oak for another brew down the line.....

FWIW, you can always split the batch in 1/2 and oak half or when you transfer to 2o or put 1 gal in a small glass jug with .5 oz of oak.   Then you can always bottle separately or blend when you bottle.

Brewed this on Memorial Day and as of right now it's still bubbling in the blow off tube once every 10 seconds or so......

Thinking about transferring to secondary to dry hop tomorrow but not sure if I should wait a little longer or not.

Don't let air lock activity dictate your fermentation schedule... take gravity readings instead.

Very true and thanks for the reminder....FG was good and racked this over to secondary with some Amarillo dry hops.

Probably will bottle this weekend :)  :pickle:

Bottled today - went smoother than usual and a bit quicker to boot! (Still really want to start kegging before long.....)

Smelled and tasted awesome....now just to wait for it to carb up!!! :ale:
