There seems to be some confusion about cheese off location. Let's do it at the TBS camp behind the real ale tent where Ed has camp set up.
I think we need a better way in general to let everyone know where TBS camp is.  We ended up out front of the 100 tent (which is where Murph's table was set up). I circled around all of the "camp" areas around Real Ale and the 100 and 200 tents and didn't see anyone I recognized.

Of course, not knowing for sure who's going to be the first in makes it hard to plant a flag or something like that, but it would be cool to do so.

next year, a literal flag in the ground would be helpful. or tie a sign around the tree. something.

Those crack pretzels were great. Would've taken a tub "to-go" but didn't want to be greedy. :unsure:
Only got to try a few cheeses, the gruyere was good, didn't see the spreadable one though.

I'd stashed my stuff at Ed's camp, and then heard later that some friends had staked out the same spot by the big tree across from the 100 tent, same as in years past. A friend of ours is obsessive about getting this spot, and was actually first in line this year :o: Thanks to Adam/Jen for providing the table! :cheers:

Camembert acquired per usual.  Also a really good sharp raw cow's milk cheese from Cricket Creek in Williamstown MA called Maggie's Reserve; it is the aged version of this:

Muscoda Mayhem has habaneros...maybe I should pick a different one for the sake of our tastebuds. I've got a morel & leek and a garlic pesto, but that one might be overkill.

We always bring a cooler.  And tupperware containers  from home to keep it from getting soggy in melted hotel ice.

Insulated cooler bag with some cold packs. Or toss into a friendly Illinois brethren's cooler. :coffee:

Also, here's the general spot where Joe makes camp, provided they don't change the designated camp areas this year. Right before the hill where you walk up to the 500/600 tents. I don't remember that "F10" being there last year, so that may move the goalposts.

This, exactly.  And I think I could inhale that pesto.  So many damn tasty cheeses I dont even know where to start.

FYI, the pesto is pretty simple, provided you have access to plenty of basil:
- 3 cups basil (packed), washed and dried
- 4-6 garlic cloves (depending on size)
- 1 cup toasted walnut chunks (switched away from pine nuts a few years back)
- 1 cup EVOO
- 1.25 cups grated Pecorino Romano and/or Parm Regg.
- fat pinch of salt & about 1/4 tsp pepper

Cram the basil, garlic and nuts in a food processor and start on med-low speed. Drizzle in oil until it starts getting pasty.  It should be fairly wet, and you may need to scrape the sides down a couple times.

Add the salt, pepper and grated cheese, and process on low speed until it's all incorporated.

Walnuts. They chopped down to maybe half-pine-nut size this time.

I stopped using pine nuts a few years back after a bad case of pine mouth.
Try pistachio.

I use cashews, as well
