The irony is, thin crust bar pizza is a staple everywhere, Chicago didn’t invent it. More places serve it than deep dish maybe, but it’s hardly Chicago’s #1 food.

I think it has the most variance out of any form of pizza.  Sure you get a wide range in deep dish (from the all crust super bready take, to the deep dish casserole swimming in sauce), but nothing swings as wildly as tavern pie.  Every time I see it on a menu, I have an internal dialogue about whether I feel like rolling the dice, or just getting something else.  I think I've had every individual component of a tavern pizza range from garbage to amazing.

tavern style, cracker crust, thin.. these are pizza.  others try to get away with too much crust, which dilutes the flavor.  i want pizza. not a loaf of bread with some sparse toppings. ratio should be near 1:1 ingredient to crust.  not 4:1 crust to ingredient.

That matzah bread pizza a lot of place serve around here is an abomination.  You can have a thin crust that still has good flavor and texture. 

If you want to each ketchup and cheese whiz on a saltine, that's fine, but don't try to pass it off as pizza.

Growing up in Ohio we had tavern style pizza pretty much everywhere. Donatos is the go to 1am drunk version, but I really miss the pizza I grew up with. It was so cheesy, greasy, and if you asked nicely they cooked it a little extra to give the outer crust that perfect char.

No joke, the place was next to a creek and about 3 years ago the erosion caused a sink hole that completely swallowed the business. They were open for decades, and in a second they were closed forever...  :thumbdown:

Miraculously, I found a pizza up here in the northwoods of Wisconsin that I actually like.

Piggly-Wiggly Take-n-Bake Pizza. No, I'm serious.

Traditional crust, neither too thick or too thin, generous but not excessive tomato sauce, loads of cheese, and delicious toppings (sausage, pepperoni, mushrooms).

Even the veggie pizza is delicious, loaded with onions, peppers and mushrooms.

And I can PIE-CUT the pizza PROPERLY.  :hot:

I've been trying to justify if there's a style of pizza unique to my area.  I think that's hard to do anymore since pizza is so widely available, and even in legendary pizza places, there's a ton of variety away from what would be considered the local style.  In my mind, the best local pizza has a medium thickness of crust, and more toppings than anything else.  Tons of meat, vegetables, and cheese.  If you are lactose intolerant, stay clear.  Some examples of what I'm talking about.

Ale Emporium is known for their wings, but they make killer pizza too.

Regular crust:


Deep dish:


Hard to tell from that pic, but their deep dish has a thinner crust, and unlike Chicago style where you get a fuck ton of sauce, it's mostly toppings in there.

Union Jacks is another amazing pizza joint.  Two locations, but go to Broad Ripple, the Speedway one isn't even close to as good.

Can't find a good pic of their regular, but here's the best I could do:


Deep dish:


Gallagher's used to have a location right by me, but that location is cursed.  Been three pizza places in that same location, all failed.



Mc Q's was a shithole bar that cranked out amazing pizza, RIP.



Not sure this is unique to us, but these guys are all making a similar product, and I'm either going to Bazbeaux, or seeking out this type of pie.

we asked what if we ordered pizza "circle cut" and she nearly lost her shit.    does anyone know of ANY place that does circle cut. not just a whole pie, but concentric circle cut pizza.  or can someone photoshop this???
