2.5 gallon batch, hit my mark on the OG - 1037
I do have one question.
I'm using a 6.5 gal plastic fermenter with about 3 gallons of beer fermenting.
Does the head space make a difference? because I started it on Saturday with hopes of seeing the airlock start bubbling but nothing yet.

You could ferment that yeast in an open shoebox and you'd be fine
