-DinoSmore stout is out and gone.
-Hibiscus Gose is coming
-Fierce (3.8% Berliner weisse) kegs are rolling in a few weeks

Why they are spread into many different markets.

Didn't even see dinosmores on a shelf >_>

The others sound really good.

I disagree that they have to expand to different markets because Chicago beer drinkers don't know what Gose and Kottbusser are.
Kind of a lame reason if you ask me. Handles are all over town, and my LBS can't keep them in stock

that did seem like a bit of lazy journalism.  if they can't sell them in a town the size of Chicago   if that was written about Black Husky in Pembine then i get it but.. can't sell them in Chicago

That is a lame reason since I imagine Chicago beer drinkers are probably more aware of those styles than drinkers in Alabama and Georgia, yet here their beers are.

Gose didn't really seem to be on anyone's radar until Westbrook brought it back in style. But in the last couple years it's had a big resurgence it seems like, at least people are marginally aware of it.

I have been noticing that as well.  There are a lot of lost German styles that are being introduced to the market again.

And more and more people are becoming more receptive to trying new beers/revival styles, which seems to be fueling demand. Doesn't hurt that Gose is ultra sessionable also.

I have seen off color on tap in Madison a couple of times now. Not sure if this is just a one off type thing or if they have already expanded into other markets a little.

And Papillon while they're at it, sadly that won't happen. Wish they'd do more of it though.

This post has been edited to reflect that Laffler did not create Bourbon County Stout, rather he "worked with" it, "managing the racking, aging, blending." He also "developed variants of Goose Island's [bourbon barrel] program which included BCS, among other beers." Our apologies for the confusion.

A few more details from Laffler in the latest issue of GLBC...
"The first of Off Color's 750ml bottle releases should be coming out this Spring. Both are American wild ales; one is brewed with Side Project, the other with Jester King. The third project in the series is a collab with Central State Brewing- a funky wheat wine that's going into puncheons."

"Radiolaria is a 4.5 percent ABV American wild ale that is brewed with sorachi ace hops as well as pils, flaked wheat and special aromatic malts at Chicago, Ill.-based Off Color Brewing on Feb. 20. The new bottle-conditioned release is unique in that it combines Off Color’s house lactic acid bacteria with Jester King’s indigenous wild yeast culture."

This shipped Monday according to Laffler on their fb page...

Looks like it started hitting some stores yesterday. You might be able to grab one today or tomorrow depending on when your spots get Windy City deliveries.

It's good, sort of simple but tasty. Not barrel aged oddly enough.
Tart grapefruit, pepper, a slight amount of Brett funk.

I've only really enjoyed their Troublesome Gose. Everything else has been overdone and substandard. Of course I'm limited to their heavily distro'd beers.

Just my opinion.

Scurry and Bare Bear weren't my thing, but Apex, Fierce, and Troublesome I drink a lot of. Imho their most interesting stuff is draft only, like Papillon, Radlersnake, Yuzu Fierce, Erd Og Begravet.

Tried Bare Bear sahti on draft yesterday.  Not bad but misses the style.  Too dark and the spicy note was missing.

This was my least favorite of all of Off Color's stuff, fwiw. Where's the juniper?

Their bottle shop is opening. 3925 W. Dickens Ave. Chicago, IL
Soft opening is Friday, Feb. 12, at 2 p.m.,
They will have weekly tickets for limited release stuff. and the first beer

Whiskers is fermented with a blend of our own funk cultures, house lactobacillus and CSB Brett strain, Brettanomyces indianapolis, and aged in puncheon barrels. Vinous, acidic, dry, and funky. Sure, Whiskers won Silver in Wild Beer - Acidic at the 2015 Festival of Barrel and Wood Aged Beer but, more importantly, it has an otter on the label.

From the website:
It's really happening... They gave us a liquor license!

It's small. It's industrial. It's gonna be freezing in the winter and boiling in the summer. But whatever. Fresh beer and special bottle releases and tours are now yours. You're welcome.

We're officially open to everyone and anyone on Wednesday, February 17 @ 3pm.

HOURS OF OPERATION:
Wednesday: 3pm-7pm
Thursday: 3pm-7pm
Friday: 2pm-8pm
Saturday: 12pm-6pm
Closed: Sunday, Monday, Tuesday
Hours subject to change, but we'll let you know!

FRESHIE FRIDAYS:
Sick of getting three-day old beer at your local boutique beer store like a chump? Well, going forward we'll have a standing bottling day every Friday so you can come by and get beer fresh off the line! Also, we should probably tell our bottling crew they're bottling every Friday.

SPECIAL RELEASES:
Our first brewery-only release will be Saturday, February 13. We are using a reservation system to keep lines down. Those tickets go on sale Sunday, February 7 at 1pm. Brewery Releases have their own page, by the way.

PUBLIC TOURS:
We’ll start with one tour on Saturdays at 2pm. Since space is limited, we think it’s best to make your reservation online. Those will commence at the end of February. Tours also have their own page. Stay tuned.

PRIVATE TOURS:
You've emailed us, we've always said "no." And for now, we'll have to keep saying "no." That could change someday so don't get too disheartened. But in the meantime, thanks for your patience.

Cool
Heard this was launching soon, but they were mum on when until the license was in hand.
Looks like Whiskers is the 1st release... Hell-Broth is bottled, might be the next one down the line.
A rep also mentioned a wild lager of some kind, possibly named "Negative Attitude" or something...

Drinking in knowledge is something we all aspire to, but give the Field Museum credit for taking the concept literally.

The Chicago museum will be selling a single batch, limited-edition beer inspired by the Wari people, who ruled an area of what is now modern Peru and northern Chile over 1,000 years ago. The beer, which will be made for the museum by Chicago's Off Color Brewing, will use ingredients such as blue corn and molle berries, according to a Field Museum press release.

Field Museum researchers discovered a Wari brewery in southern Peru that existed between 600 and 1050 A.D., and found residue from maize and molle berries at the site, which suggests the Wari combined them “to make a more potent, flavorful brew than standard chicha, a traditional corn beer,” according to a museum press release. Researchers also discovered the brewery was capable of producing 1,500 to 2,000 liters of beer in a single batch.

Off Color Brewing also created the museum's exclusive Tooth & Claw beer. The Wari Ale is described on the brewery's website as "a beer-like drink with a dry, grainy funk and pepper spiciness." It's also an unusual color, from the corn: deep purple with pink foam lacing.

The beer will be released March 3 at the Field Museum’s Hop To It Event. The event will run from 6 to 9 p.m. and is open to people 21 years and older. Tickets are $30 for Field Museum members, and $35 for non-members. For more information, visit the museum website.

The beer will be available on tap and in bottles at the Museum’s Field Bistro, as well as in bottles at select retailers, as early as March 7, according to the museum press release.

Hell Broth reservations still available

This beer is pretty awesome, got a taste recently at a CBS event. Reminded me of the first time I had Temptation, lots of oaky vanilla and citric sourness. Cranberry isn't very noticeable, but the funk & barrel elements are great :ale:

ProCATStination hit distro this week, it's really good stuff. Very white wine & oak forward.

Eeek! was released at the brewery Saturday. Interesting but not as good as the cloudy draft I tried at GT.
Cue all the "sour high life" reviews. Bugs are pretty expressive, real lemony and Berliner-ish I thought.

Eeek was really good, finally drank one on Sunday. Side by side with a can of High Life. For #science.   The new blueberry beer was decent too.

Pumped about the taproom.  Surprised by the location.

I liked those too, Hell Broth seemed pretty young. ProCatstination this year was far better than the version at Perennial.

The building itself looks cool, old train station remnant from when trains were running down Kingsbury. I'm also pumped for it.
But yeah, next to the biggest WFM in town and across from a strip club, so there's that. Cue limos of bros invading the taproom...

Is this the same thing as the beer they had a couple of years ago called Grizzly King?  Seems like it from my recollection, which would be awesome because I loved that beer.

A "faithful recreation" or something. Not identical, I think Grizzly King had cinnamon in it.
Fine by me if they left it out, wasn't noticeable in GK anyway.

You've come a long way baby... first Off Color label from way back when.
I think this was branding just for the Field Museum.

Here's a recent one:
