Grapes

Anyone ever use them before?

I just added several pounds to a 2.5gallon secondary, and have not had nearly as much activity as I was expecting.  I used a kolsch yeast, so I am using the swamp cooler to lower the temp some, I wonder if that is inhibiting secondary fermentation?

I haven't used grapes, but I did a Saison with Sauvingon Blanc concentrate and it fermented like gangbusters.

I did an old ale with merlot grape must and it fermented like mad.

Yes. This sounds like it could be amazing. Where did you get the SB concentrate?

Got the concentrate at Northern Brewer.  It's just a can of the stuff you would use to make wine.  This was a NB recipe that I thought looked interesting enough to try.  Initial reactions are that it's definitely a cross between beer and wine (uses Nelson Sauvin hops too).  I think it would be even better with some brett characteristics.  It fermented pretty dry (down to 1.004) and came in around 9%.

I peeled the nasty swamp buck shirt last night to reveal a solid krausen ring around the inside of the bucket... I am thinking that the lid just has a poor seal on that bucket - I rarely ever ferment in it, and have not used it over 6 years now ;)

Looks tasty.  How many grapes did you use?  I burned through a pack of DFH sixty-one (IPA with syrah) grapes and it was nice.

After sanitizing; I froze them over night, then crushed them the best I could in the bottom of a bucket, then racked on top of them.

I have a metric shit ton of Concord grapes from the vines in my yard. Three grocery bags thus far and more on the vines.  So, thinking of doing some semi-spontaneous beer/wine hybrid, maybe with brett as well.  Thoughts?
