So...I'm looking at the NB Bitter Brewer recipe and it says to ferment for up to 6 weeks, 1-2 primary and 2-4 secondary.  Does this seem excessive to anyone else?  I was thinking more along the lines of 2 weeks for primary then another week in secondary to dry hop.  What would be the reasoning to do secondary for that long?

I ferment everything for three weeks.  If I dry hop, I do it in primary and rack to a keg after a week :shrug:

Probably.  I don't reuse yeast.

Why *not* use secondary if you plan on pitching on the yeast cake?

I need to drink more so I have enough bottles  :unsure:  I just used up pretty much my whole stash on the 2 batches I just brewed.  (kegging is not an option at this point  <_< )

That will make it easy enough to drink.  I'm trying to stay away from my DIPA for a bit as I have no problem drinking it but am finding that having a 9.4% beer on tap isn't necessarily a good thing.

I'll probably put some recipes together soon here.  Looks like I'll brew this week and again at the end of the month.  At least one will be an IPA.  Might do another sour.  We'll see...

It's essentially the Bitter Brewer recipe from Northern Brewer.

4 Ibs. Fawcett Optic
3 lbs. Canada Malting Pale Ale Malt
0.75 lbs. Simpsons Golden Naked Flaked Oats
0.38 lbs. English Medium Crystal Crystal 60
0.05 lbs. English Roasted Barley

BOIL ADDITIONS & TIMES
(Ninety Minute Boil)
.25 oz Glacier Willamette (First Wort Hop, add to ort as it drains from mash tun)
.5 oz warrior (90 min)
1.75 oz Glacier Willamette (0 min)
2.5 oz Glacier Willamette (Dry Hop)

Yeast - WYeast Burton IPA


I fucked up and forgot my timer was only set to 75 minutes and ended the boil then.  OG was dead on so :shrug:  Color is really dark, which I'm a little confused by.  I might have accidentally used more roasted barley than needed since I didn't have a scale that would measure that small of an amount at the store.

I finally used my keggle HLT this past weekend.  I'll have to wait until I brew a 10 gallon batch to use the keggle brewpot.  I think I'm really going to like using them.

Rookie!

Pretty much, everything went to shit.  On top of having to add extra water to get to my post boil volume, I checked on the carboy last night and the fucker had spewed out of the top.  I've used blowoff tubes in the past, but never had any issues and of course it does this time.  Luckily it was a small enough amount that I could only tell because the airlock was filled with gunk.  If this somehow turns out decent I will be amazed.  First time using Wyeast 1332 so I'll blame that  :unsure:

2 beers in kegs now.  Pils is lagering and an oatmeal stout has some toasted coconut in there.  Gonna pull that this weekend and put it in the kegerator.  Then I need to get more in the fermenter.  Thinking about doing a SMASH with Galaxy.

Whoa, been a while......finally brewed again about a month or so ago.  Oatmeal stout (again?)with toasted coconut and coffee.  Turned out ok and is gone :(  Went to brew last weekend and only had a small amount of Maris Otter as far as base malts and a shitload of wheat.  So I brewed a hoppy wheat loosely based off what someone on the innerwebz said was a Gumballhead clone.  Will be dry-hopping soon then kegging for summertime consumption.   :ale:
