| Sour Ales (also called American Sour Ales or American Wild Ales) are exactly what they sound like - ales brewed and fermented to give a very notable sour taste and aroma. The color can range widely from pale gold to brown. They are also noted to have high acidity. Often, brewers use yeast strains that highlight these sour qualities, such as Brettanomyces. This style is also quite often barrel-aged, which can lend a more complex flavor. Hop presence should be low to medium in both aroma and flavor. Mouthfeel should be medium to light, with carbonation often very notable. ABV generally ranged from 4% to 9%, sometimes higher. IBUs are in the range of 20-40. |
