New England Cider is a cider made with New England apples and has a notable high acidity and higher alcoholic levels. Woodchuck Cider from Vermont is a high profile example of this beverage. The color should be clear and pale to medium yellow. The aroma has strong apple and alcohol tones. The taste should have equally strong apple and alcohol flavors. Sweetness in aroma and taste should be apparent from the use of adjuncts like brown sugar, molasses, honey are sometimes even other fruits. The aroma and taste should NOT remind you of having "spiked apple juice". The feel should be medium bodied with the carbonation very notable. ABV should be between 7% to 13%.
