Fruit Lambic is just what it says, Lambic with fruit additions (either whole fruit or syrup). Pretty much any fruit can be used. The Lambic is usually bottled with a secondary fermentation. There are unique names based on the fruit used: Sour cherry (kriek) Raspberry (framboise) Peach (pêche) Black currant (cassis) Grape (druif) Strawberry (aardbei) These Fruit Lambics are characterized by the fruit used in brewing as far as flavors and aromas. The color also reflects the choice of fruit. Sourness is almost always an important part of the flavor profile, though there may be some sweetness from the fruit. This style also makes ample use of a lesser-known and used yeast strain called Brettanomyces yeast, which often imparts a notable "funky" taste and aroma. Traditionally, Fruit Lambics have an overwhelming sourness that masks any residual sweetness. Modern version often have a slight sweetness from the fruit sugars or sometimes artificial sweeteners. ABV should range from 5% to 7%. IBUs should be low, from 15 to 20. |
