When I think "Saison", I think D'Erpe-Mere. One of my all-time favorites, and back on the shelves near me after a three year hiatus.

Pours a beautiful hazy, straw color. Monstrous and pillowy white head that very gradually recedes, leaving clumps of white froth stuck to the sides of the glass, and rocky peaks on the brew. Constant, active carbonation on the rise, providing for the ever constant cap. A quick swirl of the glass brings forth another 1/2 inch of gleaming white head...
This is a Saison, my friends.

Aroma.. good God. First, that instantly recognizable yeast funk hits the nose, quickly followed by lemon rind, peaches, pineapple mash and sweet spice. Perhaps a bit of green grape? Both candy sweet and tart. Grassy with a touch of coriander and a quick grind of white pepper.

Taste really does follow the nose - lemon is first to jump forward. Nice hop bitterness towards the middle, sweet/tart/fruity (hints of pears, melon, pineapple, and lemons) followed by the mandatory yeasty finish... familiar tastes of barn musk - burlap, fresh hay and wet leather in the background.

Medium in body, crisp and clean, yet "plush" mouthfeel. Nicely dry - a definite plus. Carbonation is perfect. Mouthfeel is the gleaming stone in this ring.

Not much else to say.... damn near perfect
