This brew pours a nice golden straw color with a massive billowing head of dense ivory head. As it settles, the foam compacts into a meringue-like consistency. The retreating head leaves a ton of sticky lace around the top. There is a good steady stream of carbonation bubbling up, helping maintain the head as well. Light passes through the beer, but it is distinctly cloudy. Overall, this is a good looking brew. The aroma is dominated by noble hop that deliver an herbal and floral blast up front. Working in with that, I find a nice blast of spicy yeast that gives me impressions of pepper. There is also an estery quality that reminds me a bit of cotton candy/spun sugar. Very enjoyable to smell. The flavor is nice. The initial sip brings a decent sweet caramel malyness that immediately flows into a blend of yeast and hop characters. I get black pepper and a lot of very vibrant herbal hop. A solid but very clean bitterness fills in on the finish and lingers well after I swallow the beer. As I get further into the brew, I find that my sense of taste is adjusting to the beer and the hop is falling off a bit to my perception and letting a little more of a creamy clove character come through along with the up-front maltyness. I enjoy this one a lot. The mouthfeel is moderate and there is a mild carbonation of fine bubbles. I get a little bit of a slickness as well. Overall, this is an enjoyable beer. I've been slowly coming around to the big noble hop additions to styles that normally don't have them. Just checked the bottle and this one rings in at over 9%. I wouldn't have guessed that, as there is little hint of the alcohol in the nose or flavor. I'd certainly buy this one again if I could get it closer to home.
