Pours an earth, dark amber - almost brown color. One finger of almond colored head takes to the top, only to succumb rather quickly. A close look reveals light, slow carbonation on the rise, feeding the collar of fine bubbles desperately clinging to the side of the glass, and this in turn leads to some strands of lacing.

Upon popping the cap, I turned to cleaning up the wax mess.... when I get aromas of sour cherries wafting from the bottle. I drop the wax, grab the bottle, and cram it as far into my nose as I can - yep, sour cherries lead the way. Some sweet spice then follows - cinnamon, anise, quickly trailed by brown sugar and sweet, candy-like sugar. Quite malty. Now for the sour: sweet balsamic vinegar. And wrapped around the sour is the funk: wet leather, just off the horse. Nice.

Again, sour cherries lead the charge here... and along with the cherries, there are hints at green apple and perhaps even pear. Nice subtle spiciness, again with the cinnamon, perhaps even nutmeg - just a faint touch. Good lactic acid sourness - not too unlike that found in molasses. The wild yeasts are certainly throwing their funk around, as this aspect melds with the sour very nicely. A definite oaky-ness to this as well, especially in the finish.

Medium in body, smooth, acidic and dry mouthfeel. Carbonation is spot on.

I really am enjoying this. Great sour and funk. However, it just seems that somewhere, something just isn't blending correctly - it seems a bit muddled, and this throws the funk out of balance towards the finish, making it seem somewhat medicinal... not that I am complaining. Just wish it was a bit more "sharp", for the lack of a better word. As it is - I really do enjoy it, can't wait to see what some time does for this one!
