Mini-magnum, 12.7oz corked, capped, & wrapped. Cork stamped 2006.
Nice label, bold red Cantillon lettering on mustard background against black detail, and silhouette of a tipsy fellow in a chair. "Classic Gueuze"

Pours a cloudy orange apricot, hazy. Some bubbles froth up, but soon settle to a ring around the glass. Some cloudiness, no sediment to be seen. Served at cellar temp, around 50º.

Once out of the bottle, the predominant aroma is farmhouse yeast and wet pastures. This is cut by a sharp citric note, but it is alluring and easy to get lost in. Definite funky cheese in there, it intensifies with a swirl of the glass. Soft woody oak around the edges. Aroma is by far the best ever i've smelled in a Gueuze.

Taste is initially tart citrus upfront, mellow fruit and hay funk in the middle, closed by a dry, sour finish. Some farmhouse cheese rind reveals itself too. Ethereal traces of dry oak round it out. A little acidic in the mouthfeel, but not as abrasive as some. Mellow enough to take a gulp, but that's almost sacrilege. Dryness enhances the session factor, even though it's a pricy option.

Lots of character to this one...i'm returning to it more and more all the time. A classic indeed.
