Bottle No. 05304

Pours an ever-so-slightly hazy, brassy golden color. Monstrous, pillowy, finely bubbled head quickly takes shape - and I don't believe it has any intention of going away. After 5 minutes or so, it has receded to about 1/2 of an inch, leaving strands and clumps of lacing in its wake, frothy and lumpy is the head that remains - and this is constant, thanks to the steady streams of carbonation rising from beneath.

Aroma is mouthwatering. Strong aromas of fresh, sweet green hay, lemon rind, apple blossoms, green fruits (grapes, apples). Somewhat sweet and spicy - candy sugars, coriander, small hints of white pepper. Behind it all, and entertwined so well, is that musty aroma of wild yeasts at work - nicely subtle, yet ever so recognizable - lending a certain yet slight sour aspect to the overall experience.
Phenomenal.

Taste is excellent - I had almost forgotten about the dry hopping of this - my first sip quickly brings this back to my attention. Good citrus hop notes - tangerine and to be specific. Fruity - sweet apple, pear, pineapple and lemon. Flowery. Lightly spicy, more clove with a dash of white pepper than anything else. Lightly phenolic. Sugary - candy sugar, and this blends with the tartness of it all - not sour, tart - thanks to the brett. not really funky/musky... yes, there are hints, but not as much as the nose led me to believe.

Moderate in body, smooth yet crisp, 'zingy' mouthfeel. Carbonation is perfect. Clean and somewhat dry finish.

I absolutely love this. Looks and aroma is fantastic... in the looks department, this is perfect - just as a Saison should look. The aroma, while somewhat different, is soooo mouthwatering, I'm going to score it as perfect also - not spot on for style, but my god, how could anyone not rate it as perfect?!?
The taste, while very good, does not live up to the aromatic billing - but far from disappointing. Refreshing, sweet, slightly dry, soooo damn quaffable.
I believe some time will only prove what I am hoping for - more dryness, and perhaps the funky tart will become more pronounced. With the sugary sweetness of this, I believe it will develop these characteristics - prime candidate for the cellar.
