A- cork pulls out like a shot with a lemon yellow body having just a touch of haze. There is a snow white head supported by lots of strands of tiny bubbles racing to the surface. The second glass is quite murky.
S- The rich saison yeast aroma gives way to a nice white cheese mold Brett character with some grapefruit pith Brett smells to follow.
T- The nice full Brett cheese rind has some lemon tartness as it opens but it is covered a bit by the scrubbing fizz. There is a fleeting pineapple hint with some big herbal pungent bite of hops in the finish. A touch of sweetness in the finish compliments all the flavors nicely. A tartness and raw wheat flavor come though as it opens and the fizz dries out the finish.
M- The light mouthfeel has a big scrubbing fizz and no alcohol or astringency noticed.
O- The fizz and bitterness component is a bit too big but this is one of the best Brett beers I have had from the states. The saison qualities are nice but outshined by its wild cousin. Very drinkable and sessionable with lots of great character.
