A hazy, swarthy straw color spills into the glass. Huge clouds of cotton and meringue find their place atop fed by streamers of constant carbonation. Webs of thick lacing adhere to the glass with incredible adhesion. Classic appearance.

Love the aroma. Reminds me of hiking one of the local gorges in the area - rich, moist earth and slate rock creek bed aromatics heavy in the nose. Lemons and tropical fruits. The meaty flesh of peaches. Sugary. Lightly herbal. Buttered flowers. What?

Light citrus presence - mostly lemons and lemon pith. Wildflower honey, pepper and a slice of peach. Unsalted cracker. Hints of herbal and floral gardens. Now, I had no idea what chamomile tasted like... so I looked it up. Sweet, buttery, floral. Yup, buttered flowers - good descriptor.

Medium in body, plush, soft mouthfeel. Carbonation is not quite to style, with it's subtle zestyness that fades rather quickly from the tongue.... but I think this balances a chamomile Saison rather well. Calm, relaxing. Intentional or not - I like the balance it brings. Very nice dryness in the most interesting lingering finish.

I love this. Chamomile? Hell yes! Drinkable, thirst quenching, well balanced, simple yet with enough to challenge the palate. Wish it was available locally.
