Pours a cloudy orangey pastel yellow, with a thin layer of foam on the surface that doesn't stick around long. Foam recedes to a thin wing around the edges after the first sip. Starts to look like a mimosa after the yeast is poured.
Aroma is lightly funky, Brett yeast and citrus zest, a touch of esters and a light peppery note from the yeast. A bit more tame than expected, but nice in it's freshness and simplicity.
Taste is lightly tart with supple carbonation, white grapefruit juiciness, some light Brett funk also expresses itself in a rudimentary way, it's present but not especially developed at this point.
Very drinkable and thirst quenching. I got more of a tafelbier impression, something more light and rustic to pair with cheese and charcuterie, than a standalone wild ale to thoroughly dissect and ponder by itself. It begs to be put in a barrel for some added oaky complexity.
