Lambic d’Haute Densité by Brasserie Cantillon
9.10 % ABV

Our Lambics are beers with 5%ABV. Some of our beers, like Vigneronne, Saint-Lamvinus or Iris reach 6-6.5% ABV because of the fruit fermentation and the higher gravity of sugar in the wort.
The normal gravity in a Lambic wort sits around 12,5° Plato.

Lambic has always been a very mysterious beer and, at Cantillon, we are very curious people. That's the reason why we decided 3 years ago to brew a higher gravity Lambic. We reached 25°Plato, twice the normal gravity of wort for Lambic. The result was amazing: A 9.7% ABV Lambic with 8°Plato residual sugar.

We repeated the experiment again two years ago. Because of the high level residual sugar in the first brew, we decide to produce a wort with a lower gravity to obtain the same alcohol level with less sweetness. Lambic works in mysterious ways though, and with the wort at 22°Plato we got the same level residual sugar with less alcohol, 8.7%ABV. Because of the high alcohol level, we had no more evolution after 2 years and we decide to blend those two brews and to bottle it in February of this year.

The result is surprising. The beer is amber, without carbonation, and comes in at 9.1%ABV and 8° Plato residual sugar.

It's close to a Barley Wine or an oxidized wine like Madeira, Sherry or Vin Jaune. Even more surprising is that when we forgot a half-empty bottle, th beer was still good when we tasted it....after 8 days.

This beer will be poured for the first time next weekend in Portland (Maine) for The Festival organised by Shelton Brothers and 12% imports.
